1 can diced tomatoes
1 tsp italian seasoning
1 tsp salt
1-2 cloves garlic (chopped) or 1 Tbsp pre-diced garlic
handful of fresh parsley washed and roughly chopped (only because I had it in the fridge!)
2 large spoonfuls of pumpkin puree, this thickens the sauce a bit. If I hadn’t had this in the fridge (from pumpkin pancakes) I would have drained the diced tomatoes before using them.
half a green pepper (waiting to be used in the fridge)
Other veggies or things you have in the fridge. I could have added my roasted tomatoes and green beans but I was already planning ot use them as toppings!
Use blender or food processor to blend together all the ingredients.
